Semi-sweet vegan zucchini cake

What do you do when your Grandma gives you about 1kg of zucchini from her garden?

I made dinner. Twice. And I still have some. So I searched pinterest for some zucchini recipe and I stumbled across this chocolate zucchini cake yesterday that sounded just perfect for me. I read through it and was sure I had all the ingredients at home. I was exited all day and was looking forward to start.

I put everything on the kitchen counter and realized - I don't have any eggs. I was 100% sure I bought some but apparently I didn't.

Seeing that I already almost started and my boyfriend took my car earlier (the next supermarket is 4km away and I thought it was sunday anyway, which means no shopping in Germany) I decided to look for things I could use as replacements and found an awesome website that had replacement options for literally everything. And so an idea formed in my mind. Why not veganise this awesome recipe?

I found applesauce as a replacement for the eggs and vegetable oil as a replacement for the butter and started my little experiment.

 

"Experiment" because I'm pretty good at following recipes perfectly but not that great at changing them up or making up new ones.

I started throwing everything in the bowls, made a huge mess with the flour and cocoa as always and spilled the milk and the oil. So nothing extraordinary.

When I finally managed to put the batter in the baking pan and wanted to put it in the oven I realized I forgot to preheat it. Again, nothing extraordinary. That's just a talent of mine. Just like forgetting to cook the garnish like rice or noodles when cooking dinner.

So when the oven was finally hot I put the cake in and waited. And waited. And waited. It took over 60 minutes to bake it thoroughly but when it came out it smelled like chocolate heaven.

I managed to let it cool down and even covered it with chocolate before I finally tried it.

And let me tell you: It was worth the waiting. It's moist, rich, chocolaty but not too sweet.

I'm normally not one to praise myself but gosh, I did good with this.

 

So without boring you even more, here's the recipe:

 

250g (2 cups) spelled flour

30g (3 tbs) raw cocoa

1 tsp baking powder

1 pinch of salt

140g (1.5 cups) caster sugar

150ml (5 fl oz) vegetable oil

150g (1/3 lb) unsweetened applesauce

100ml (3/4 fl oz) oat milk (or any other you like)

215g (7.5 oz) Zucchini

100g (3.5 oz) dark chocolate (I used 75g 85% and 25g 70% chocolate)

(5 tbs rum)

 

100g of chocolate for the icing

 

 

Preheat oven to 175 degrees Celsius (350 Fahrenheit).

 

Grate the zucchini, cut the chocolate in small pieces or grate it as well.

Mix the flour, cocoa, baking powder in a small bowl.

Whisk the sugar and the oil until it foams up a bit, then add the applesauce and mix until it's all combined properly.

Start adding parts of the flour mix and the milk and rum while whisking until it's all combined.

Add the grated zucchini and chocolate and mix thoroughly.

Put the batter in a prepared baking pan and let it bake for a good 60 minutes.

 

Ice it with chocolate when cooled down and serve it with a glass of your preferred milk.
